Set in the quiet rolling hills of Knightville, Giermindl Farms encompasses approximately 325 hectares. Lukas Giermindl, along with his wife Jenny and their daughter Claire, raise and care for the land and livestock you’ll see when you look out the window of our restaurant.
From growing all the forages and grain, to milling our own feed in our grainery, and raising the animals, we take great pride in how we care for our farm. We try to keep everything here a closed circle, which allows us to have the greatest control over how our animals are raised.
We value a diverse farm – we currently have cattle, sheep, goats, a variety of birds (chickens, ducks, turkeys, etc.), pigs and a couple horses and a donkey. During the summer months (June – October), our animals are outside; having these different kinds of animals on the land increases the productivity of the ground, therefore allowing us to grow the best feed for our stock when they are housed inside for the winter. Our barns feature open concepts to allow our animals to exhibit their natural behaviors while still ensuring comfort.
Our animals are raised gently and in an extensive manner. We take time to ensure we provide the best quality of life for our livestock – they are the heart of everything we do.
